S'mores Cupcakes

Description

You'll need:

2 Cups self rising flour
3/4 cup of white granulated sugar
1/4 cup of brown sugar
2 tbsp cocoa
1 tsp of baking powder
4 eggs
1 cup melted butter/ butter substitute
1 cup +some small marshmellows
1 cup crushed graham crackers

In a large mixing bowl, Mix the dry ingredients together (Flour, sugars, baking powder) and in a separate bowl,
mix the eggs and butter together, THEN add them to the dry ingredients, beat for about 4 minutes. It should be the color of chocolate chip cookie dough

Then, pull all your cupcake holders into a cupcake pan, then fill them up about 1/3 of the way (about a spoonful of batter) Add in a few small marshmellows to the center, try not to push them down too much, you don't want them touching the bottom. Then, fill the cups to about 2/3s full with the batter, covering the marshmellows.

Bake at 350% for 18-20 minutes.

When they come out, let them cool, and do the following:
Melt down the 1 cup of marshmallows, (and if you want, a bar of chocolate too) and a spoonful of butter. Swirl (don't mix) this together, and use as icing for the cupcakes. Then, dip the cupcakes face down into a bowl of crushed graham crackers. (I added a few marshmellows on top for presentations sake
